Christmas tiffin
Ingredients:
• 200 grams milk chocolate
• 200 grams dark chocolate (ideally 70% cocoa solids)
• 125 grams butter
• 3 tablespoons golden syrup
• 4 mince pies
• 175 grams biscuits
• 50 grams glacé cherries (optional)
• 50 grams dried cranberries (optional)
Method:
1. Line a container (roughly 20cm square) with greaseproof paper.
2. Break the chocolate into small pieces and put in a heatproof bowl with the butter. Set the bowl over a saucepan of simmering water and heat gently, stirring often, until melted. Add the golden syrup and stir until smooth.
3. Chop the mince pies and biscuits into small pieces. Quarter the glacé cherries. Add to a large bowl, with the cranberries, and mix well.
4. Pour the melted mixture into the dry ingredients and stir thoroughly until everything is covered in chocolate.
5. Press the mixture into the lined container until the surface is level.
6. Chill in the fridge for 3 hours or until set. Cut into 16 squares to serve.
7. Store in the fridge an airtight container for up to 7 days or freeze for up to a month. Best served at room temperature.
